We package the cookies with extra care (includes individual wrapping for each cookie) in order for them to avoid breaking while in transit. We cannot be held responsible for broken cookies once they have left our bakery. Additionally, we cannot be held responsible if a package is shipped out on the date of your choosing but arrives late or is lost en route.

PLEASE NOTE: Due to COVID and other weather-related issues, many shipping carriers are experiencing delays, even if it states that the arrival date is "guaranteed." We are unable to give refunds for any shipped package that does not arrive on time or gets lost en route due to issues with the shipping carrier. Once your order leaves our bakery we cannot be held responsible for how the package is handled. Please keep this in mind when placing your shipped cookie order.

Make the cookie base: Place 1 stick unsalted butter in the bowl of a stand mixer fitted with the paddle attachment for the cookie base (or in a large bowl if using an electric hand mixer) and 4 tablespoons unsalted butter for the frosting on the counter. Let sit out at room temperature until softened, about 45 minutes.

Assemble the cookie cake: Remove the cookie from the pan and discard the parchment. Place the cookie on a cake stand or serving plate. Pipe small, decorative mounds of the frosting around the edge of the cookie. Sprinkle the frosting mounds and cookie with 2 tablespoons rainbow sprinkles.

No disrespect to the pizookie (aka pizza cookies), but the cookie cake is the highest form of the most basic baked good. The pizookie? You can buy one at almost any grocery store. Layers of cookies and frosting stacked up high to reach dessert bliss? Only at Lowrider Baking Company, the cookie operation from pastry pro Emily Allport.

Once the whole cake business is up and running, expect rotating cookie cake slices to join the menu alongside the three current flavors and myriad cookies. Allport has already dreamt up a lengthy list of new combinations, like an oversized Little Debbie oatmeal creme pie.

Hi Kelly, this is common with thick cookie doughs when baking them in a baking pan (instead of as cookies). The dough rises as it bakes, and sinks back down as it cools. Nothing you did wrong. The cake will be nice and dense inside, instead of cakey and light.

This easy and Chewy Cookie Cake Recipe is the perfect way to celebrate birthdays or other special occasions! It tastes so much better than store-bought and only costs about $8 to make! Leave unfrosted or top with my favorite vanilla buttercream and sprinkles for a simple homemade cake!

Tip: If you notice 2-3 chocolate chips are stuck together, separate them before baking. This will allow the chocolate to be evenly dispersed and prevent the cookie from having a giant clump of chocolate in one spot (which could cause it to more easily break while cutting).

How do you know when cookie cake is done? The top should be slightly brown (see below) and the center baked through. The cookie may still look slightly underbaked but this is the trick to a soft, chewy cookie. If you overbake it and it gets too brown, you will have a crunchy cookie cake. Allow the cookie cake to cool completely before removing.

If you want to write on a message, you will likely need to thin down the frosting a bit with more milk (not much though, only a teaspoon or two!). But you want to know my life hack to this these days? Order one of these adorable letterboard cake topper kits (the letters are plastic!) that you can reuse for YEARS to come to write ANY message!

Grease a 11.5" metal cookie cake pan (don't have one? See notes below.) Although this cookie removes cleanly, if you are worried about it sticking, line the bottom and sides of the pan with parchment paper first. Using a spoon or your clean hands, drop the dough into small chunks in the pan. This will help disperse everything so that you can easily smooth it out. Once all dough as been added, use a spatula or your hands to press down the dough into a smooth layer (being sure to get all the corners).

Tip: To remove from pan, use a knife to go around the edges, place a flat platter on top, then flip over the pan to remove. If you used parchment paper, this should come out rather smoothly. After flipping over the cookie cake, flip it over again on the final decorate plate or platter (I LOVE these cute paper trays and the largest one in the pack is perfect for a 10" cookie cake).

If you're feeling fancy, you can double the frosting recipe to have enough to pipe phrases like "Happy Birthday" on the top. Or use this fool-proof letterboard cake topper kit (these are made from plastic so you can wash and reuse for years!).

Hello! I am making a tiered cookie cake for a wedding and planning to use this recipe! Will this dough refrigerate well? If so, will I need to allow it to completely come to room temp before baking? Thanks so much!

I have tried almost all of the flavors offered and all I can say is someone pick me up off the floor!!! These are the best cookies I have ever had ! My favorite is......ALL of them! They are amazing but even better if popped into the microwave for a few seconds, especially the S'more cookie. I can't wait to order more. ......deliciously decadent that you want more and more of..

Macadamia nut cookies are my favorite! I don't eat many of them because sometimes you get them and they're too sweet, BUT this cookie is not your average cookie. It will be the best you've ever had. It's perfection! I need more!

Is it a cake? Is it a giant ice cream sandwich? Here at Baskin-Robbins we think our new Cookie Cakes are a little bit of both, so keep reading for the inside scoop on this innovative new product!

First, some background on the new dessert. Our Cookie Cakes do look a bit like giant ice cream sandwiches, with two round chocolate chip cookie or brownie crusts stacked around 20 oz of your favorite Baskin-Robbins ice cream flavor, including our April Flavor of the Month, Boston Cream Pie, and seasonal flavor Horchata Ice.

The inspiration for our new Cookie Cakes came from listening to Baskin-Robbins fans and the giant cookies people sometimes decorate for birthdays and other celebrations. The idea sandwiching a layer of our delicious ice cream between two Polar Pizza Ice Cream Treat crusts to create a Cookie Cake just made complete sense. Our culinary team made sure that our crusts are soft and chewy so that they can be decorated, sliced and enjoyed easily, just like a cake!

Pro-tip: These Cookie Cakes can be customized with many of the Baskin-Robbins current cake designs. So, if you are looking for something extra special, check in with your local Baskin-Robbins cake designer. 041b061a72
